  1. 2 Libras ( 1 kg) lomo de puerco, (cortado en rebanadas) de 1/2 pulgada (1 cm)
  2. 3 Dientes Ajo
  3. 1 Cebolla mediana cortada a la mitad
  4. 6 Tazas agua
  5. 3 Cdas sal
  6. Pipián (mole)
  7. 1/2 taza semillas de calabaza
  8. 1 Chile ancho
  9. 1 Chile guajillo
  10. 1 Chile morita
  11. 1 Rebanada Pan de caja
  12. 3 cdas Maseca (Harina de maíz para hacer tortillas)
  13. 1/2 cdts comino entero
  14. 2 dientes ajo
  15. Manteca o Aceite de maíz
  16. Sal y
  17. al gusto pimienta

  1. Para cocer la carne de puerco
    Ponga a HERVIR el agua con el ajo, una mitad de la cebolla y la sal, AGREGA la carne, deja cocinar por 1 hora aproximadamente a fuego medio alto o hasta que las rebanadas de lomo CASI se desboronen al apretón de dos dedos, DEJAR enfriar un poco y proceder con la elaboracion de la salsa.

    En una cazuela de barro poner aceite o manteca a fuego medio a calentar, una vez caliente freír las semillas de calabaza hasta tomar un color dorado, sacar y estilar el aceite sobrante en toallas de papel, enseguida poner los chiles a freír por 20 segundos Aprox.
  3. Darles la vuelta para freír la parte posterior, sacaros y estilarlos, dorar la rebanada de pan de caja hasta que tome un color dorado intenso, sacar y estilar.
  4. En la licuadora poner una taza de caldo de la carne de puerco, los chiles partidos en dos, semillas, pan dorado, ajo la restante mitad de cebolla, cominos sal y pimienta al gusto. Licuar hasta tomar la consistencia de una pasta espesa, agrega una taza mas de caldo y vuelve a licuar.
  5. Retira de la licuadora, mientras tanto en la cazuela de barro pon a calentar mas aceite o manteca y una vez caliente agrega las cucharadas de maseca (Esto se usara para espesar el pipián) meneando constantemente hasta que la maseca empiece a tomar un color amarillento, colar la salsa en un colador.
  6. Después vaciar a la cazuela de barro moviendo constantemente (empezara a espesar) una vez que empiece el hervor, agrega los trozos e puerco, checa por sazón (sal) dejar cinco minutos mas y a servir
