- 500 gr de langostinos cocidos
- 2 aguacates
- 2 dientes ajo
- 1 cebolla
- 1 limón
- 1 yogurt natural
- 1 cucharada sopera Chía
- 1 cucharada sopera sésamo
- 2 cucharadas soperas coco rallado
- Sal, orégano, ajo en polvo
- aove
- 2 tazas agua
- 1 taza arroz basmati

- Comenzaremos preparando el arroz para poder meterlo en la nevera y que se enfríe (yo lo preparé a primera hora de la mañana). Calentamos 1 cucharada sopera de AOVE en una cazuela, salteamos 2 dientes de ajo, añadimos una taza de arroz basmati, movemos 3 minutos y añadimos 2 tazas de agua. Hervimos a fuego alto 10 minutos y dejamos a fuego medio bajo otros 10 minutos hasta que se evapore toda el agua. Tapamos y dejamos enfriar.
- Limpiamos, pelamos y cortamos los langostinos. Reservamos. Guardamos el arroz en la nevera ya que durante el tiempo que nos dedicamos a los langostinos se habrá enfriado suficiente.
- Cortamos los 2 aguacates y añadimos el zumo del limón exprimido para que no se haga negro, aliñamos con sal, orégano y ajo en polvo. Cortamos la cebolla a cuadraditos pequeños.
- Sacamos el arroz de la nevera y empezamos a añadir los ingredientes, primero el aguacate, movemos e integramos bien, luego los langostinos, movemos e integramos y por último añadimos la cebolla. Ahora vamos a añadir la cucharada sopera de sésamo, chía y las 2 de coco rallado. Movemos e integramos bien.
- Como toque final, añadimos el yogurt natural y aliñamos al gusto, sal, orégano, un poco más de zumo de limón, un chorrito de AOVE, jengibre molido y sal. Movemos una vez más para integrar bien todos los ingredientes y metemos en la nevera durante 3-4 horas.
